FRENCH FOND OF THE SWEET TASTE OF SUCCESS

By MICHELLE SUTTON
Authentic French bakery Petit Paris is satisfying Taranaki taste buds with the ultimate sweet treat after visiting France to hire New Plymouth's first ever French Patissier, who started this week.
French Pattisier Jeromē Couilard arrived from North France this week and started work on Sunday at Petit Paris, owned by New Plymouth's Kate and Fred Laude.
Fred, originally, from St Malo in North France, and Taranaki bred Kate flew to France in August this year to employ a French Patissier to work in their New Plymouth French bakery. The trip to France had two purposes; to introduce their 10-month-old-baby Margaux to family and to hire a French Patissier.
After arriving in St Malo and introducing their baby daughter to family, the French grapevine spread. Word got around St Marlo that the pair wanted to hire a Patissier, which led to Fred catching up with an old acquaintance, Jeromē, who had been working as a Patissier for 10 years. After meeting Jeromē twice the couple offered the 27-year-old a job at Petit Paris and helped him to apply for a visa before returning to New Zealand.
''He was keen for a different culture and wanted to see the other side of the world, a new culture and new flavours,'' said Mrs Laude, formerly a chief in New Plymouth.
Mr Laude said Jeromē successfully passed the toughest part of his job interview; boarding a plane to New Zealand and receiving a two-year visa.
''I didn't want to tell him too much about New Zealand. I told him we are a young company with a really vibrant team and a busy place - that was my warning '', said Mr Laude.
After opening Petit Paris about 14 months ago, he predicted cooking by a French Patissier would be gladly accepted by Kiwi taste buds.
''Kiwi's have a really sweet tooth so Jeromē was pretty safe in that regard. While we added the French food influence we have had to keep the Kiwi favourites like carrot cake and muffins. Kiwis are really big cake and muffin eaters. We have no muffins in authentic French bakeries, but Kiwi's love muffins,'' he said
